Chicken Enchiladas

Below is a recipe for a really good chicken filling for my Basic Enchiladas

INGREDIANTS
aprox 2 cups cubed skinless chicken breasts, cooked unseasoned
1/4 cup chopped onion
1/2 teas minced garlic
1/2 teas ground cumin
1/4 teas chili powder


DIRECTIONS
mix all ingrediants together in a bowl.  Follow instructions for Basic Enchiladas, using this as a filling in the enchiladas along with a handful of shredded cheese

  2. Unfortunately, smart salt is made from potassium salt and magnesium salt. Although that is ok for people who only have to worry about sodium intake. My husband, and many others with kidney disease, also have potassium limited. So, we can not use most salt substitutes, including smart salt.
